Whipped cream siphons can be used many ways other than whipped cream. For example, you can use it to infuse flavors into vodka or rum, into oils, into beverages. You can use it to make flavorful foams to impress your friends.
Because of the way a siphon works (aeration in a closed system with rapid chilling), many aerated liquids no longer require stabilizers. However, you can use gelatin or agar for things like fruit foams to ensure they maintain the fluffy form. Use the siphone for mousse, whipped yogurt, hollandaise, pavlova, omelets....the list goes on.
You could basically put any sauce in there and get an airy, foam-like version for cooler presentation.
You can also use them to carbonate just about anything. Instead of charging the siphon with N2O, use CO2. Stuff some grapes or other juicy fruit inside, charge with CO2 and make your own fizzy fruit. You can make nitro coffee, your own sodas, carbonated fruit juices and so much more.
